One of the things I like the most about Jackie Chan is his imaginative use of ordinary household items in his fight and chase scenes. In this clip he talks about it and shows a few examples.

This is a superb post - thanks John.
The adding of coins inside the hat to change its weight is a very useful tip. An extension of this idea is to change the centre of balance of an object to create surprising movement and wonderful illusions.
A colleague of mine performs a sight gag where he brings on a ladder from the wings. The gag is that the despite our expectations the ladder is only 2 feet long. The illusion can be very effectively improved by adding weights to the bottom of the short ladder distorting the perceived centre of balance. This makes the ladder behave more like a long ladder - all without the need for mime.
